Fall Harvest Salad Recipe

  • 2 shallots, peeled and minced
  • 6 tablespoons Safeway SELECT Red Wine Vinegar
  • 2 tablespoons honey
  • 1 teaspoon kosher or regular salt
  • 1 teaspoon fresh-ground black pepper
  • 1/2 cup O Organics™ Extra Virgin Olive Oil
  • 3 (6 ounce) packages Eating Right™ Harvest Medley Salad Blend
  • 3/4 cup thinly sliced red onion
  • 1 ripe pear, rinsed, cored, and cut into 1/2-inch dice
  • 3/4 cup crumbled Safeway SELECT Primo Taglio Imported Danish Blue Cheese
  1. Mix shallots, vinegar, honey, salt, pepper, and olive oil. In a bowl, combine salad blend (including nut and fruit packets) with onion, pear, and blue cheese. Add salad dressing, mix, and serve.
