Soda farls with fried eggs Recipe

  • 1 soda farl, cut in half
  • 2 tbsp olive oil
  • salt and freshly ground black pepper
  • 2 free-range eggs
  • 1 flat leaf parsley leaf
  1. Place a medium frying pan over a high heat. Drizzle the soda farl halves with one tbsp of the olive oil and season both sides, to taste, with salt and freshly ground black pepper. Place the farls into the frying pan and cook for one minute on each side until golden. Remove from the pan and set aside.
  2. Set another frying pan over a medium heat, pour the remaining tbsp olive oil and swirl around the pan.
  3. Carefully add the two eggs and gently fry for two minutes, or until cooked to your liking.
  4. Serve the eggs on the toasted soda farls, garnished with the parsley leaf.
