Shrimp Tabbouleh Recipe

  • 1 (6 ounce) package bulgur
  • 1 1/4 cups boiling water
  • 2 tablespoons olive oil
  • 1/2 pound small peeled and cooked shrimp
  • 1 cucumber, peeled and diced
  • 1 cup chopped red onion
  • 1/2 cup chopped fresh mint
  • 1/2 cup chopped fresh parsley
  • 1 lemon, juiced
  1. Place the bulgur in a large bowl and add the boiling water and oil. Cover and let stand for 30 minutes.
  2. Stir in the shrimp, cucumber, onion, mint, parsley, and lemon juice. Serve warm, or chill for at least an hour and serve cold.
