Roasted Carrots And Parsnips Recipe

  • 1 pound carrot, peeled and cut into 1 inch pieces
  • 1 pound parsnips, peeled and cubed
  • 4 small red onions, sliced
  • 6 cloves garlic
  • 1/2 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon grated lemon peel
  1. Preheat the oven to 375 degrees F. Coat a medium baking pan with cooking spray. Add the carrots, parsnips, onions, garlic, oil, salt, and lemon peel. Toss to coat well.
  2. Bake, stirring occasionally, for 40 minutes, or until golden and tender.
