- 1 pound carrot, peeled and cut into 1 inch pieces
- 1 pound parsnips, peeled and cubed
- 4 small red onions, sliced
- 6 cloves garlic
- 1/2 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon grated lemon peel
- Preheat the oven to 375 degrees F. Coat a medium baking pan with cooking spray. Add the carrots, parsnips, onions, garlic, oil, salt, and lemon peel. Toss to coat well.
- Bake, stirring occasionally, for 40 minutes, or until golden and tender.
