Ravigote Recipe
- 1/4 cup red onion, coarsely chopped
- 1 tablespoon capers, drained and rinsed
- 2 tablespoons red wine vinegar
- 4 tablespoons olive oil
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh tarragon, chopped
- 1/2 teaspoon black pepper, freshly ground
- 1/4 teaspoon salt, or to taste
- Mix together the capers with the chopped onions, parsley, chives, tarragon salt and pepper. Toss. Drizzle the vinegar and oil. Toss. Let it sit for about 30 minutes before serving.
