- 1 (12 inch) pre-baked pizza crust, such as Boboli
- 1 tablespoon creamy peanut butter
- 1/3 cup Thai peanut sauce
- 1 1/2 cups shredded rotisserie chicken
- 1/2 thin-sliced red bell pepper
- 1 large carrot, peeled and shredded
- 4 green onions, thinly sliced
- 2 tablespoons chopped fresh cilantro
- Adjust oven rack to center position and preheat oven to 450 degrees F (230 degrees C).
- Whisk peanut sauce and peanut butter in a medium bowl until smooth. Spread sauce over the pizza crust. Spread chicken then the red pepper over pizza; bake until hot and crisp, 12 to 14 minutes. Remove pizza and sprinkle with carrots, green onion and cilantro. Cut into pieces and serve.
