Quick and Easy Lemon Chicken and Rice Recipe

  • 1/2 cup KRAFT House Italian Dressing
  • 1 pound boneless skinless chicken breasts, cut into strips
  • 1 cup chicken broth
  • 1 cup small broccoli florets
  • 1 red pepper, cut into strips
  • 1 cup thinly sliced carrots
  • 2 cups MINUTE Brown Rice, uncooked
  • 1 teaspoon lemon pepper seasoning
  • 2 tablespoons KRAFT 100% Grated Parmesan Cheese
  1. Heat dressing in large skillet on medium-high heat. Add chicken; cook and stir 1 min.
  2. Add broth, broccoli, red pepper and carrots. Bring to boil.
  3. Stir in rice. Return to boil. Reduce heat to low; cover. Simmer 5 min. Remove from heat. Let stand 5 min. Stir in lemon pepper seasoning; sprinkle with cheese.
