Pepper and Egg Sandwich Recipe

  • 1 1/2 tablespoons olive oil
  • 2 cloves garlic, chopped
  • 2 green peppers, washed, seeded, and sliced
  • 1 red pepper, washed, seeded and sliced
  • 1 yellow pepper, washed, seeded and sliced
  • Salt and pepper
  • 4 large eggs, beaten
  • Grated parmesan or Romano cheese
  • 1 loaf Fresh Bake Shop Italian or French Bread
  1. Saute garlic in olive oil on medium-low in skillet until the garlic is golden.
  2. Add peppers and season with salt and pepper to taste.
  3. Continue cooking and stirring until peppers are a soft texture. Raise heat and add eggs. Stir well, cooking eggs thoroughly.
  4. Sprinkle with cheese and serve on toasted slices of bread.
