Hot Pepper Jack Cornbread Recipe

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 Safeway SELECT Organic Large Egg
  • 1 cup Safeway SELECT Organic Milk
  • 3/4 cup shredded Safeway SELECT Primo Taglio Hot Pepper Jack Cheese
  1. In a large bowl, stir together cornmeal, flour, sugar, baking powder, and salt until well combined. In a medium bowl, combine oil, egg, and milk; whisk until well blended.
  2. Add egg mixture to cornmeal mixture and stir just until dry ingredients are moistened, mixing in cheese with last several strokes. Spread batter in a lightly oiled 8-inch-square baking pan.
  3. Bake in a 425 degrees F oven until top is lightly browned and a wooden pick inserted in center comes out clean (about 20 minutes) Cut into squares and serve warm or at room temperature.
