Fish Broth Recipe

  • 1 small whole fish, such as whiting, head on, cleaned
  • ¼ cup dry white wine
  • 1½ cups water
  • ½ bay leaf
  • ¼ teaspoon thyme
  • 1 small onion
  • 1 small carrot, scraped and cut in half
  • 6 peppercorns
  • Salt
  1. Place all broth ingredients in a saucepan and bring to a boil. Cover and simmer 1 hour. Strain.
