- 1 small whole fish, such as whiting, head on, cleaned
- ¼ cup dry white wine
- 1½ cups water
- ½ bay leaf
- ¼ teaspoon thyme
- 1 small onion
- 1 small carrot, scraped and cut in half
- 6 peppercorns
- Salt
- Place all broth ingredients in a saucepan and bring to a boil. Cover and simmer 1 hour. Strain.
