Wild Alaska Halibut Kabobs Recipe

  • 4 teaspoons olive oil
  • 2 tablespoons lime or lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme, crushed
  • 1/4 teaspoon pepper
  • 2 tablespoons fresh garlic, minced
  • 1 medium green or sweet red pepper, cut into 1-inch squares
  • 1 small red onion, cut into 1 inch pieces
  • 1 pound halibut, cut into 1-inch cubes
  1. Combine first six ingredients; mix well. Marinate remaining ingredients in mixture 1-2 hours.
  2. Thread pepper, onion, and halibut on four 8 inch or longer metal or bamboo skewers.
  3. Broil or grill 4-5 inches from heat for 6 to 8 minutes or until fish flakes when tested with a fork.
