West Coast Burgers Recipe

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried basil
  • Freshly ground black pepper
  • 1 zucchini, sliced diagonally
  • 1 red pepper, cut into quarters
  • 1 onion, cut into quarters
  • 1 pound ground turkey breast
  • 8 diagonal slices French bread
  • 1/4 cup shredded reduced-fat Monterey Jack cheese
  1. To Make Sauce: Combine vinegar, oil, garlic, basil, and black pepper in a shallow baking dish.
  2. Add zucchini, red pepper, and onion to sauce and toss to coat. Thread vegetables on 2 metal skewers. Reserve sauce. Grill vegetables over medium-hot coals until tender, turning often, about 15 minutes. Remove from grill and cover loosely with foil to keep warm.
  3. Meanwhile, to make burgers: Gently shape turkey into 4 burgers. Place burgers in remaining sauce and turn to coat. Grill burgers until well done, until no pink remains, turning once, about 15 minutes.
  4. Place each burger on a bread slice and top with grilled vegetables, cheese, and another bread slice.
