- 1/4 cup water
- 1/4 cup sugar
- 2 cups seeded watermelon chunks (about 1 1/2 pounds with rind)
- 2 ounces vodka, or to taste
- 1/4 cup fresh lime juice, or to taste
- Garnish: two 5- to 6-inch- long thin slices watermelon rind with some flesh attached
- In a saucepan boil water and sugar, stirring, until sugar is dissolved. Cool syrup and chill, covered, until cold.
- In a blender purée watermelon chunks until smooth and stir in 1/4 cup syrup, vodka, and lime juice.
- Serve coolers over ice in 2 tall glasses and garnish with watermelon rind.
