- 1 pak choi, quartered
- 25g/1oz piece root ginger, peeled, finely chopped
- 1 red chilli, finely chopped
- 1 tbsp balsamic vinegar
- 1 orange, peeled, segmented
- 3 tbsp olive oil
- 1 tbsp fresh chopped chives
- salt and freshly ground black pepper
- Place the pak choi into a steamer and steam for five minutes, or until wilted.
- Whisk the rest of the ingredients together in a small bowl to make a dressing.
- To serve, pile the pak choi onto a serving plate and drizzle over the dressing.
