Warm pak choi salad with ginger and chilli dressing Recipe

  • 1 pak choi, quartered
  • 25g/1oz piece root ginger, peeled, finely chopped
  • 1 red chilli, finely chopped
  • 1 tbsp balsamic vinegar
  • 1 orange, peeled, segmented
  • 3 tbsp olive oil
  • 1 tbsp fresh chopped chives
  • salt and freshly ground black pepper
  1. Place the pak choi into a steamer and steam for five minutes, or until wilted.
  2. Whisk the rest of the ingredients together in a small bowl to make a dressing.
  3. To serve, pile the pak choi onto a serving plate and drizzle over the dressing.
