Wacky Mac®, Pork and Tomato Salad with Chile Vinaigrette Dressing Recipe

  • 1 (1 pound) pork tenderloin, cooked and cut into bite-size pieces
  • 2 medium tomatoes, cored and diced
  • 1 large scallion, trimmed and chopped
  • 1/4 cup sliced pimiento-stuffed olives
  • 1 large celery rib, trimmed and chopped
  • 1 tablespoon minced fresh basil
  • 2 cups cooked Wacky Mac® (prefer Veggie Spirals), rinsed under cold water; drained well
  • 2 tablespoons olive oil, plus
  • 1 teaspoon olive oil
  • 4 teaspoons white wine vinegar
  • 1/4 teaspoon crushed dried oregano
  • 1 serrano chile, cored, seeded and minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  1. Combine pork, tomatoes, scallion, olives, celery and basil in large salad bowl. Add cooked Wacky Mac; toss gently but well.
  2. Stir together olive oil, vinegar, oregano, chile, salt and pepper in small bowl. Pour over salad just before serving. Toss well.
