- 2 cups cooked Wacky Mac® (prefer Veggie Bows)
- 1 pound thin asparagus, steamed and cut into bite-size pieces
- 2 ounces prosciutto, cut into bite-size pieces
- 1 tablespoon olive oil
- 1/8 teaspoon crushed, dried oregano
- 1/4 teaspoon pepper
- 4 teaspoons chicken broth
- 1 tablespoon white wine vinegar
- 1/4 cup grated Parmesan or aged Gouda cheese
- Combine the Wacky Mac, asparagus and prosciutto in a large salad bowl. Stir together oil, oregano, pepper, chicken broth and vinegar in a cup. Pour over the Wacky Mac combination. Toss gently but well. Sprinkle on cheese.
