- 1/2 cup 1% low-fat cottage cheese
- 1 medium tomato, thinly sliced
- 2 tablespoons shredded carrot
- 1 1/2 teaspoons chopped chives or green onions
- 1/4 teaspoon dried basil
- Paprika (optional)
- 4 Quaker® Butter Popped Corn Rice Cakes
- Place 2 or 3 slices of tomato on each Butter Popped Corn Rice Cake.
- Combine cottage cheese, carrot, chives and basil and mix lightly.
- Top tomato slices with cottage cheese mixture.
- Garnish with paprika, if desired.
