Vegan Fried Rice Recipe

  • 1 teaspoon olive oil
  • 1 1/2 cups cooked white rice, warmed
  • 1/4 cup soy sauce
  • 1 teaspoon sesame oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 4 mushrooms, sliced
  • 3 green onions, diced
  1. Heat olive oil in a large skillet over medium-high heat. Add rice; cook and stir until heated through, 2 to 3 minutes. Stir in soy sauce and sesame oil. Add onion, red bell pepper, mushrooms, and green onions; cook and stir until tender, 5 to 10 minutes.
