Vegan Coconut Macaroons Recipe

  • olive oil cooking spray (such as PAM®)
  • 2 1/2 cups unsweetened, flaked coconut
  • 1 cup unbleached flour
  • 3/4 cup cashews
  • 3/4 cup water
  • 1/2 cup turbinado raw sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon almond extract (optional)
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Spray a baking sheet with cooking spray.
  3. Combine coconut and flour in a large bowl.
  4. Puree cashews, water, sugar, salt, and almond extract together in a blender.
  5. Stir cashew mixture into coconut mixture until well blended.
  6. Form coconut mixture into 1-inch balls and flatten; arrange on the prepared baking sheet.
  7. Bake cookies in the preheated oven until edges are golden, 12 to 15 minutes.
