- 10 pounds roma tomatoes, sliced, or to taste
- 4 red onions, sliced
- 2 tablespoons salt
- 2 tablespoons freshly ground black pepper
- 2 cups olive oil
- 1 1/2 cups lemon juice
- 1 1/2 bunches fresh cilantro, chopped
- Arrange tomatoes and onions on a large platter. Season with salt and black pepper.
- Whisk olive oil and lemon juice together in a medium bowl; pour over salad and toss to coat. Sprinkle with cilantro.
