Turkey Tenderloin Fajitas Recipe

  • Nonstick cooking spray
  • 1 (30 ounce) package JENNIE-0 TURKEY STORE® Seasoned Pepper Breast Tenderloin, cut into 1-inch strips
  • 3 cups sliced red bell peppers
  • 3/4 cup green onion, sliced into 3-inch strips
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 8 teaspoons reduced-fat sour cream or crumbled queso fresco cheese
  • 8 flavored tortillas, warmed
  • Salsa verde, if desired
  • Fresh limes, if desired
  1. Spray large nonstick skillet with cooking spray; heat over medium heat until hot. Add turkey. Cook and stir 5 to 7 minutes or until browned and no longer pink in center. Remove turkey from skillet. Drain excess liquid from skillet, if necessary.
  2. Add bell peppers, green onions and garlic to skillet. Cook and stir 5 minutes or until tender. Sprinkle with salt and ground red pepper. Return turkey to skillet. Cook and stir 1 to 2 minutes.
  3. Spread 1 teaspoon sour cream on one side of each tortilla. Spoon turkey and bell pepper mixture over sour cream; roll up tortillas. Serve with salsa verde and fresh limes, if desired.
