Turkey Mole Recipe
- 1 (30 ounce) package roast turkey-flavor turkey breast tenderloins
- 1 (16.5 ounce) jar Archer Farms™ cocoa chile mole cooking sauce
- 1 cup raisins
- 3 tablespoons pine nuts or slivered almonds (optional)
- Heat oven to 325 degrees F. Lightly spray 11×7-inch baking dish with cooking spray.
- Place tenderloins in baking dish, thinner portions overlapping to make an even thickness overall. Roast 45 minutes.
- Mix mole sauce and raisins; pour over turkey. Bake about 45 additional minutes or until center reaches 165 degrees F. on instant read thermometer; basting with sauce every 10 minutes.
- Slice turkey and arrange on platter. Spoon some of mole sauce over slices and remainder around edges. Sprinkle with pine nuts.
