Tuna, tomato and spaghetti salad Recipe

  • 1 cos lettuce, roughly chopped
  • 2 ripe tomatoes, chopped
  • 100g/3½oz tinned tuna, drained
  • 2 spring onions, chopped
  • handful fresh parsley, chopped
  • ½ mozzarella ball, cut into cubes
  • 110g/4oz spaghetti, cooked according to packet instructions, drained and allowed to cool
  • 1 tbsp olive oil
  • 2 tsp balsamic vinegar
  • salt and freshly ground black pepper
  1. For the salad, place all the salad ingredients into a bowl and mix well.
  2. For the dressing, place the oil and vinegar into a bowl, season with salt and freshly ground black pepper and mix well.
  3. To serve, pour the dressing over the salad, stir well and place into serving bowls.
