- 1 tbsp olive oil
- ½ red pepper, sliced
- ½ red onion, sliced
- 1 trout fillet
- 1 lemon, sliced
- ½ chilli, chopped
- 1 tbsp soy sauce
- Preheat the oven to 220C/425F/Gas 7.
- Heat the oil in a wok and when hot add the red onion and red pepper. Stir fry for one to two minutes or until softened.
- Spread out a large piece of baking parchment and place the stir fried vegetables onto the middle.
- Top with the trout fillet and place the lemon slices and chopped chilli on top. Pour over the soy sauce.
- Fold the parchment around the trout fillet and seal tightly.
- Lay on a baking sheet and cook in a hot oven (220C) for ten minutes.
