Tropical Rice Pilaf Recipe

  • 1 1/2 cups uncooked instant rice
  • 1 cup orange juice
  • 1 cup pineapple chunks
  • 1/2 cup water
  • 1 tablespoon vegetable oil
  • 1 tablespoon fresh cilantro, chopped
  • Salt and pepper, to taste
  1. In a saucepan, bring orange juice and water to a boil. Stir in the rice, pineapple, salt, pepper and oil. Reduce heat; cover and cook for 5-8 minutes or until liquid is absorbed.
  2. Remove from heat and let stand for 5 minutes.
  3. Toss rice with chopped cilantro and serve.
