Tossed Green Salad with Italian Dressing Recipe

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 2 garlic cloves, minced
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • Freshly ground pepper to taste
  • 8 to 10 cups mixed greens
  • 1 tomato, cut into bite sized pieces and drained
  • 6 green onions, including some tender green tops, sliced
  • 5 or 6 mushrooms, sliced
  • 1 cucumber, peeled, sliced lengthwise, seeded, and sliced (optional)
  • Italian Dressing (recipe follows)
  1. To Make the Italian Dressing:
  2. In a medium bowl, whisk together all ingredients.
  3. To Make the Salad:
  4. In a large bowl, combine all salad ingredients and toss with enough dressing to coat.
