- 1.4kg/3lb cooking apples, peeled, cored and roughly sliced
- 100g/3½oz soft brown sugar
- 3 eggs
- 200g/7oz caster sugar
- 200g/7oz butter, softened
- 200g/7oz ground almonds
- sliced almonds for decoration
- Preheat the oven to 160C/320F/Gas 2.
- Put the apples and brown sugar in a large pan and cook over a low heat until soft.
- In a large bowl beat the eggs with the caster sugar then mix in the butter and ground almonds to create a smooth paste.
- Divide the cooked apples between six ramekins and spread the almond mixture on top.
- Sprinkle some sliced almonds on top of each and and cook for about 50 minutes until golden brown.
- Serve hot with cream or ice cream.
