Torta di mele e mandorle (mini apple and almond pie) Recipe

  • 1.4kg/3lb cooking apples, peeled, cored and roughly sliced
  • 100g/3½oz soft brown sugar
  • 3 eggs
  • 200g/7oz caster sugar
  • 200g/7oz butter, softened
  • 200g/7oz ground almonds
  • sliced almonds for decoration
  1. Preheat the oven to 160C/320F/Gas 2.
  2. Put the apples and brown sugar in a large pan and cook over a low heat until soft.
  3. In a large bowl beat the eggs with the caster sugar then mix in the butter and ground almonds to create a smooth paste.
  4. Divide the cooked apples between six ramekins and spread the almond mixture on top.
  5. Sprinkle some sliced almonds on top of each and and cook for about 50 minutes until golden brown.
  6. Serve hot with cream or ice cream.
