- 1 tomato, roughly chopped
- 2 spring onions, finely chopped
- ½ cucumber, roughly chopped
- small handful fresh basil, torn
- small handful fresh flatleaf parsley, torn
- 2-3 tbsp olive oil
- ½ lemon, juice only
- salt and freshly ground black pepper
- Mix all the ingredients together in a large bowl and season, to taste, with salt and freshly ground black pepper. Serve immediately.
