- 1 tomato, sliced
- 1 spring onion, sliced
- 1 apple, sliced
- 1 tbsp balsamic vinegar
- 3 tbsp olive oil
- salt and freshly ground black pepper
- large handful fresh coriander
- 1 duck egg, poached, to serve
- Mix the tomato, spring onion, apple, balsamic vinegar, and olive oil together in a large bowl and season to taste with salt and freshly ground black pepper.
- Spoon into a serving bowl and top with the poached duck egg.
