- 2 thick slices of bread
- 1 tbsp olive oil
- 1 clove garlic, crushed
- ½ yellow pepper, de-seeded and sliced
- 4 mini mozzarella balls
- handful fresh basil
- 4 cherry tomatoes, sliced in half
- sea salt and freshly ground black pepper
- Preheat the grill to its highest setting.
- Brush the bread with the oil and rub in the garlic.
- Layer the remaining ingredients onto the bread, season and place under the grill for 2-3 minutes, until cheese is bubbly. Serve.
