- 1 roll of pre-rolled puff pastry
- 1 egg, yolk only
- 2 large handfuls spinach
- 4 tomatoes, sliced thinly
- log soft goats' cheese rolled in herbs
- drizzle of olive oil
- 1 tsp of dried thyme
- salt and pepper
- Preheat the oven to 190C/375F/Gas 5.
- Add the spinach to the pan and cook for 2-3 minutes, then dry with kitchen roll.
- Take a pre-rolled sheet of puff pastry (rolled out 2cm/in thick), take a side plate and use it as a template by placing it on the pastry and cutting around it. Brush the pastry circle lightly with beaten egg yolk.
- Place the spinach on the pastry.
- Add the slices of tomato in a crescent spiral and season
- Sli the goats' cheese log and arrange in a spiral on top of the tomatoes.
- Drizzle over olive oil, salt, pepper and dried thyme (optional).
- Bake in oven for 15 to 20 minutes. Serve with a rocket salad.
