Tomato and goats cheese galette with spinach Recipe

  • 1 roll of pre-rolled puff pastry
  • 1 egg, yolk only
  • 2 large handfuls spinach
  • 4 tomatoes, sliced thinly
  • log soft goats' cheese rolled in herbs
  • drizzle of olive oil
  • 1 tsp of dried thyme
  • salt and pepper
  1. Preheat the oven to 190C/375F/Gas 5.
  2. Add the spinach to the pan and cook for 2-3 minutes, then dry with kitchen roll.
  3. Take a pre-rolled sheet of puff pastry (rolled out 2cm/žin thick), take a side plate and use it as a template by placing it on the pastry and cutting around it. Brush the pastry circle lightly with beaten egg yolk.
  4. Place the spinach on the pastry.
  5. Add the slices of tomato in a crescent spiral and season
  6. Sli the goats' cheese log and arrange in a spiral on top of the tomatoes.
  7. Drizzle over olive oil, salt, pepper and dried thyme (optional).
  8. Bake in oven for 15 to 20 minutes. Serve with a rocket salad.
