Tofu Ricotta Cheese Recipe

  • 1 (16 ounce) package firm tofu, drained
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon extra-virgin olive oil
  • 1 teaspoon nutritional yeast flakes
  • 1/2 teaspoon balsamic vinegar
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon minced shallot
  • 1/2 teaspoon chopped fresh basil
  • 1/2 teaspoon chopped fresh parsley
  • kosher salt to taste
  • freshly cracked black pepper to taste
  1. Mash tofu with your hands in a large bowl until crumbly; add lemon juice, olive oil, nutritional yeast, vinegar, garlic, shallot, basil, parsley, kosher salt, and black pepper. Gently mix tofu mixture with a fork until well combined.
