- 2 large onions, thinly sliced into rings
- 5 small plum tomatoes, seeded, cored, sliced
- 4 large garlic cloves, minced
- 1 tablespoon minced fresh thyme
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Preheat oven to 450°F. Combine first 4 ingredients in 9×13-inch shallow roasting pan. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper. Toss well. Roast in oven until onions are golden brown and very tender, stirring occasionally, about 45 minutes or less Transfer to bowl. Serve hot or at room temperature.
