The Great Pumpkin Recipe
- 1 (13.75 ounce) can fat-free chicken broth
- 1 large onion, chopped
- 2 carrots, chopped
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/3 teaspoon salt
- 1/8 teaspoon pepper
- 1 (16 ounce) can canned pumpkin
- 2 cups evaporated fat-free milk
- 1/4 cup low-fat sour cream
- 4 teaspoons bacon bits
- In a large pot, combine the chicken broth, onions, carrots, baking soda, cinnamon, salt, and pepper, and simmer uncovered for 10 to 15 minutes, until the carrots are soft. Put the vegetables and broth into a blender or food processor and blend until smooth. Add the canned pumpkin and evaporated milk, and simmer uncovered for 10 minutes. Serve topped with sour cream and bacon bits, if desired.
