Thai Kabobs Recipe

  • 1 cup creamy peanut butter
  • 1/2 cup soy sauce
  • 1/2 cup lime juice
  • 1/2 cup brown sugar
  • 4 large garlic cloves, minced
  • 4 teaspoons ground coriander
  • 1 (13.5 ounce) can coconut milk
  • 1 (1 pound) pork tenderloin – cut into 1 1/2 inch pieces
  • 1 pound skinless, boneless chicken breast halves – cut into 1 1/2 inch pieces

  1. In a medium bowl, mix peanut butter, soy sauce, lime juice, brown sugar, garlic, coriander and coconut milk; divide mixture between 2 large resealable bags. Place pork pieces in one bag and chicken pieces in the other. Seal bags; shake gently, and marinate in the refrigerator for at least 1 hour.
  2. Preheat grill for high heat. Thread marinated pork or chicken onto skewers; discard marinade.
  3. Place skewers on hot grill. Cook covered, turning once, until grill marks appear and meat is cooked through, about 8-10 minutes. Remove from grill and serve.
