Tex-Mex Bake Recipe

  • 1 cup Minute® White or Brown Rice, uncooked
  • 1 pound ground beef
  • 1 (15 ounce) can chili beans
  • 1 (10 ounce) can diced tomatoes and green chilies
  • 1 (12 ounce) bag crushed tortilla chips
  • 1 pound prepared cheese product, cut into cubes, divided
  1. Preheat oven to 350 degrees F. Prepare rice according to package directions; set aside.
  2. Brown meat in large nonstick skillet over medium heat; drain off excess fat.
  3. Mix in cooked rice, beans and tomatoes with chilies. Cover bottom of baking dish with chips. Layer half of cheese over chips. Top with rice mixture. Top with remaining cheese.
  4. Bake uncovered, 15 minutes or until cheese is melted.
