Tame Stress Salad Recipe
- 1 cup baby spinach
- 1 cup mixed field greens
- 4 medium strawberries, sliced
- 2 tablespoons sliced fennel
- 1/4 cup sliced green onion tops
- 1/3 cup canned salmon, drained
- 1 1/2 tablespoons walnuts, chopped
- Dressing:
- 1 teaspoon honey
- 1 teaspoon lemon juice
- 2 teaspoons olive oil
- 1/8 teaspoon black pepper
- In a large bowl toss together the baby spinach, field greens, strawberries, fennel, and green onion.
- In a small bowl, stir together honey and lemon juice. Slowly whisk in oil. Season to taste with pepper. Add the salmon to the bowl of greens. Pour the honey and oil mixture over the bowl of greens, tossing to coat. Sprinkle with the chopped walnuts.
