Szechuan Stir Fry Beef and Potatoes Recipe

  • 1 tablespoon vegetable oil
  • 1 (20 ounce) package Simply Potatoes® Diced Potatoes with Onions
  • 1/2 cup prepared Szechuan or stir-fry sauce
  • 1 cup water
  • 1 (16 ounce) bag frozen stir-fry vegetables
  • 1/2 pound sliced deli roast beef, cut into strips
  • Hot cooked white rice
  1. Heat oil in 12-inch nonstick skillet over medium-high heat. Add Simply Potatoes(R) and 1/4 cup Szechuan sauce; mix well. Cover; cook, stirring occasionally, for 5 minutes. Add 1/2 cup water. Cover; continue cooking 5 minutes. Add frozen vegetables, roast beef, remaining 1/4 cup Szechuan sauce and 1/2 cup water. Cover; cook 6 to 7 minutes, stirring occasionally, until vegetables are tender.
  2. Serve over hot cooked rice.
