Sweetcorn and bacon chowder Recipe

  • 2 slices streaky bacon, chopped
  • 1 tsp butter, melted
  • 1 garlic clove, chopped
  • 1 tsp plain flour
  • 150ml/¼ pint whole milk
  • 50ml/2fl oz double cream
  • 50g/1¾oz uncooked sweetcorn
  • 6 clams, steamed for 5 minutes (discard anyt hat don't open)
  • salt and freshly ground black pepper
  • fresh chives, to garnish
  • thick crusty white bread, to serve
  1. Fry the bacon for 2-3 minutes, add the butter and garlic and cook for 1 minute. Add the flour and stir well.
  2. Gradually add the milk and cream and stir well. Add the sweetcorn and simmer until thick.
  3. Add the clams and pour into a bowl. Garnish with chives and serve with crusty white bread.
