- 3 sweet potatoes, peeled, halved crosswise, then cut into 1-inch wedges
- 4 cloves garlic, crushed
- 1 1/2 tablespoons olive oil
- 1/4 teaspoon dried thyme
- 1/4 teaspoon salt
- Crushed red pepper, to taste
- Preheat oven to 400 degrees F. On a rimmed baking sheet, toss the sweet potatoes with the garlic, oil, thyme, salt, and crushed red pepper. Roast until tender and beginning to brown, 30 to 45 minutes.
