Sweet Potato Stew Recipe
- 1/4 pound lean turkey kielbasa
- 1 1/2 pounds sweet potatoes, peeled and chopped
- 1 cup chopped celery
- 1 cup chopped onions
- 2 (14.5 ounce) cans low-sodium diced tomatoes
- 1 cup chopped carrots
- 1 cup water
- 1/4 teaspoon pepper
- In a pot over medium-high heat, saute kielbasa until browned, about 3 minutes.
- Add potatoes, celery, onions, tomatoes, carrots, water, and pepper. Bring to boil. Reduce heat to low. Cover and cook, stirring occasionally, until vegetables are tender, 25 to 30 minutes.
