Sweet plum bruschetta with cinnamon cream Recipe

  • 1 slice white bread
  • 25g/1oz buter
  • 1 plum, sliced
  • 1 tbsp brown sugar
  • 200ml/7fl oz double cream, whipped to soft peaks
  • icing sugar, to dust
  • pinch cinnamon
  1. Preheat the oven to 180C/350F/Gas 4.
  2. Spread the bread with half of the butter, and lay the plum slices on top. Sprinkle over the brown sugar, dot with the remaining butter and place on a baking tray in the oven for 4-5 minutes, or until the butter is melted and bubbling.
  3. Serve the plum bruschetta with the cream and a dusting of icing sugar and cinnamon.
