- 2 cups cooked corn kernels
- 1 small red bell pepper, stemmed, seeded, and diced
- 1 small green bell pepper, stemmed, seeded, and diced
- 1/2 cup diced red onion
- 1/4 cup minced fresh cilantro
- 1 tablespoon olive oil
- Salt and pepper
- In a small bowl, combine corn, red and green peppers, red onion, cilantro, olive oil, and salt and pepper to taste.
- Use, or cover and chill up to 4 hours.
