Sweet and spicy nuts and cherries Recipe

  • 3 tbsp caster sugar
  • pinch dried chilli flakes
  • 100g/3½oz brazil nuts, shells removed
  • 1 lime, juice only
  • 1 orange, juice only
  • handful fresh mint, chopped
  • 50g/2oz canned black cherries, stones removed, drained
  • 1 orange, cut into wedges, to serve
  1. Place the sugar into a frying pan and heat until melted and golden. Add the chilli flakes and the nuts and cook over a low heat, stirring occasionally, for 2-3 minutes.
  2. Add the lime and orange juice, the chopped mint and cherries and stir well to coat in the caramel.
  3. To serve, pour the sweet and spicy nuts and cherries into a bowl and garnish with the orange wedges.
