- 3 tbsp caster sugar
- pinch dried chilli flakes
- 100g/3½oz brazil nuts, shells removed
- 1 lime, juice only
- 1 orange, juice only
- handful fresh mint, chopped
- 50g/2oz canned black cherries, stones removed, drained
- 1 orange, cut into wedges, to serve
- Place the sugar into a frying pan and heat until melted and golden. Add the chilli flakes and the nuts and cook over a low heat, stirring occasionally, for 2-3 minutes.
- Add the lime and orange juice, the chopped mint and cherries and stir well to coat in the caramel.
- To serve, pour the sweet and spicy nuts and cherries into a bowl and garnish with the orange wedges.
