Sweet and sour stir fry with honey squid and parsley oil Recipe

  • 1 tbsp vegetable oil
  • ½ romero pepper, finely chopped
  • 1 tbsp white wine vinegar
  • 2 tbsp tomato ketchup
  • 1 tbsp brown sugar
  • ½ tsp chilli, chopped
  • 1 squid tube, cleaned and chopped
  • 2 tbsp honey
  • 2 handfuls fresh parsley leaves
  • 55ml/2fl oz olive oil
  • 1 lime, juice only
  1. Heat a wok to a high temperature.
  2. Add the oil and when smoking add the romero pepper, vinegar, tomato ketchup, brown sugar and chilli. Stir fry for five minutes.
  3. Add the squid and honey and cook for a further two minutes.
  4. For the parsley oil, place the parsley, olive oil and lime juice in a small food processor and blend until smooth.
  5. To serve, place the squid stir-fry on a plate and drizzle over the parsley oil.
