Sweet-and-Sour Red Cabbage and Apples Recipe

  • 1 tablespoon butter
  • 1 tablespoon canola oil
  • 1 large onion, chopped
  • 1/2 medium head red cabbage, thinly sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground allspice
  • 3 medium sweet-tart apples (such as Golden Delicious), cored and sliced
  • 1/4 cup apple juice concentrate
  • 2 tablespoons red wine vinegar
  1. In a large saucepot or Dutch oven, heat the butter and oil over medium heat until the butter melts. Add the onion and cook, stirring frequently, for 6 minutes, or until soft.
  2. Add the cabbage, salt, pepper, and allspice. Cook, stirring frequently, for 4 minutes, or until the cabbage begins to wilt and the color starts to change.
  3. Add the apples, apple juice concentrate, and vinegar. Bring to a boil. Reduce the heat to low, cover, and simmer, stirring frequently, for 15 minutes, or until the cabbage is very tender.
