Summer Succotash Pasta Toss Recipe

  • 2 cups Archer Farms™ whole wheat penne pasta
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1 cup grape tomatoes, halved
  • 1 cup fresh corn kernels
  • 1/2 cup frozen baby lima beans
  • 2 tablespoons chopped fresh basil
  1. Cook and drain pasta as directed on package.
  2. Meanwhile, heat oil in large nonstick skillet over medium-high heat. Add onion and garlic and cook about 4 minutes, stirring constantly, until crisp-tender.
  3. Stir in tomatoes, corn and lima beans and cook 8 to 10 minutes, stirring occasionally, until vegetables are just tender. Remove from heat.
  4. Add drained pasta and basil to vegetables in either skillet or a warmed serving bowl. Season to taste with salt and pepper; toss.
