Stuffed Pepper with Mushrooms, Greens, and Ground Turkey Recipe

  • 12 ounces lean ground turkey
  • 1 onion, chopped
  • 1/2 cup whole garlic cloves, chopped
  • 2 cups sliced mushrooms
  • 4 cups chopped greens, such as kale or collards
  • 2 cups water
  • 1 cup wild rice
  • 1 cup raw pumpkin seeds
  • 1 teaspoon hot sauce, if desired
  • 6 whole green or red bell peppers, halved, seeds removed
  1. Cook turkey in a skillet lightly coated with cooking spray or olive oil. Stir in chopped onion, garlic, mushrooms, and greens. Allow to steam slightly. Add 2 cups water and then stir in the rice. Cook covered 30 minutes or until rice is tender.
  2. Add pumpkin seeds and hot sauce, if desired.
  3. Place peppers hollow side up in a baking dish and stuff with turkey mixture. Bake, covered, for 1 hour or until peppers are tender.
