Strawberry-Rhubarb Cup Dessert Recipe

  • 1 pound fresh rhubarb, cleaned, cut into 1/2-inch thick slices
  • 1/2 cup sugar
  • 1 (4 ounce) package JELL-O Brand Strawberry Flavor Gelatin
  1. Combine rhubarb and sugar in a large saucepan. Stir in 1 cup water.
  2. Cook and stir on medium heat until mixture comes to a boil, then continue to boil for 2 min. Remove from heat. Stir in gelatin until completely dissolved. Pour evenly into 7 dessert cups.
  3. Refrigerate 3 hours or until firm. Garnish each serving with 1 Tbsp. thawed COOL WHIP Whipped Topping and a strawberry, if desired.
